Ingredients

4 slices bread, crusts trimmed and cut in to cubes

1/2 cup, plus 1 Tbsp extra virgin olive oil

2 cloves garlic, minced and divided

Salt and lots of ground pepper to taste

1/4 cup lemon juice

2 egg yolks

1 Tbsp Dijon mustard

12 cups kale, washed and chopped

3/4 cup grated parmesan cheese
